Ingredients

  • 1 lb kielbasa sliced into rounds
  • 2 cup broccoli florets
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion sliced into wedges
  • 0.25 cup honey for honey garlic sauce
  • 4 clove garlic minced
  • 2 tbsp soy sauce for honey garlic sauce
  • 1 tbsp Dijon mustard for honey garlic sauce
  • 1 tbsp olive oil for honey garlic sauce
  • 0.5 tsp red pepper flakes for honey garlic sauce
  • 1 sesame seeds for serving
  • 1 green onions for serving

Equipment

  • 1 sheet pan

Method

Prep and roast
  1. Preheat the oven to 400°F and line a large baking sheet with parchment or foil for easy cleanup. You should see the pan ready for roasting at the full temperature.
  2. Whisk together honey garlic sauce ingredients until the honey and mustard fully combine. Mix until the sauce looks smooth and glossy with no honey streaks.
  3. Toss kielbasa, broccoli, red bell pepper, green bell pepper, zucchini, and red onion with the sauce until evenly coated. Everything should glisten and look lightly glazed.
  4. Spread the coated mixture on the baking sheet in a single layer. Arrange so vegetables aren’t piled, giving room for caramelization.
  5. Roast for 20-25 minutes, tossing halfway, until the vegetables are caramelized and the kielbasa is golden. Look for browned edges on broccoli and tender-crisp vegetables with darker, glazed spots.
  6. Scatter sesame seeds and green onions over the hot sheet pan and serve immediately. The garnish should lightly toast from the heat without losing brightness.

Notes

For the best caramelization, keep everything in a single layer and use a hot oven so the glaze browns instead of steaming; sheet-pan dinners like this store in the refrigerator up to 3 days and reheat well in a 375°F oven or skillet. Freezing: yes, but expect softer vegetables after thawing. Dietary swap: use tamari (gluten-free soy sauce) to make the sauce gluten-free while keeping the same flavor profile.
