Ingredients

Green bean bundles
  • 1.5 lb fresh green beans Trimmed.
  • 8 bacon Halved crosswise (8 slices total).
  • 0.25 cup butter Melted.
  • 0.3333 cup brown sugar
  • 2 garlic Minced.
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep
  1. Preheat oven to 400°F. Blanch the green beans in boiling water for 3 minutes, then plunge into ice water and drain.
  2. Gather 8-10 trimmed green beans into a bundle and wrap with a half slice of bacon, placing seam-side down in a baking dish.
Make glaze and bake
  1. Whisk the melted butter, brown sugar, minced garlic, soy sauce, and black pepper until smooth. Pour the glaze evenly over the bacon-wrapped green bean bundles.
  2. Bake at 400°F for 25-30 minutes, until the bacon is crisp and the glaze is bubbly. Spoon pan glaze over the bundles and serve warm.

Notes

For the best crisp-tender texture, keep the blanched beans cold in the ice bath until fully chilled, then drain well before bundling. Refrigerate leftovers in an airtight container for up to 3 days; rewarm in a 350°F oven until hot. Freeze is not recommended because the bacon glaze can lose texture after thawing. For a lower-sodium option, use reduced-sodium soy sauce.
