Ingredients

brown sugar
  • 1 cup brown sugar Packed brown sugar helps the glaze thicken and caramelize.
honey
  • 0.25 cup honey Adds sweetness and a glossy finish.
juice
  • 0.25 cup pineapple or orange juice Use either juice for fruit brightness.
dijon mustard

  • 2 tbsp butter Helps emulsify and adds richness.
apple cider vinegar
  • 1 tbsp apple cider vinegar Boosts flavor and keeps the glaze from tasting flat.
ground cinnamon
  • 0.5 tsp ground cinnamon Warm spice flavor.
ground cloves
  • 0.25 tsp ground cloves Use for classic holiday depth; keep measured.

Equipment

  • 1 cast iron skillet

Method

Make the glaze
  1. Combine brown sugar, honey, pineapple or orange juice, Dijon mustard, butter, apple cider vinegar, cinnamon, and cloves in a saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
  3. Simmer 3-4 minutes until slightly thickened and glossy, then keep it warm for glazing.
Glaze the ham
  1. Brush the glaze over a fully cooked ham during the last 30 minutes of baking, applying it about every 10 minutes for even coverage.
  2. Spoon the remaining warm glaze over sliced ham at the table.

Notes

Pro tip: Keep the glaze warm and stir before each brushing so it stays glossy and spreadable. Store leftovers in the refrigerator up to 4 days, then rewarm on low until fluid; freeze up to 2 months (thaw overnight in the fridge). Dietary swap: Replace butter with an equal amount of olive-oil-based spread to reduce dairy while keeping the glaze clingy.
