Make the cider cake layers
- Reduce apple cider to 1/2 cup, then cool it completely so it won’t melt the batter. Preheat the oven to 350F and grease two 9-inch pans.

Frost and finish
- Beat the cream cheese frosting ingredients until fluffy, starting with cream cheese and butter, then mixing in powdered sugar, vanilla, and 2 tablespoons cider.
- Frost and stack the cooled cake layers using a thick, even layer between them.
- Drizzle caramel down the sides and over the top so it cascades over the frosting.
Notes
Pro tip: cool the reduced cider and the baked layers completely before frosting—warm cider or warm cake can cause frosting to loosen. Store the assembled cake in the refrigerator for up to 4 days; freeze undecorated layers up to 2 months and thaw overnight in the fridge. For a lighter option, use low-fat cream cheese while keeping the same measurements for proper frosting texture.
