Ingredients

Cream cheese
  • 16 oz cream cheese softened
Cheddar cheese
  • 2 cup shredded sharp cheddar
Cranberries and aromatics
  • 0.25 cup dried cranberries, chopped
  • 2 green onions, finely sliced
  • 0.5 tsp garlic powder
Pecans
  • 1 cup pecans, finely chopped
Crackers and pretzels
  • 1 sleeve round butter crackers
  • 12 pretzel rods
  • 1 red bell pepper small piece
  • 1 baby carrot tip
  • 2 candy eyes

Equipment

  • 1 stand mixer

Method

Mix the cheese ball base
  1. Beat the softened cream cheese, shredded sharp cheddar, chopped cranberries, finely sliced green onions, and garlic powder until completely combined and smooth-looking.
  2. Shape the mixture into a ball and wrap it tightly in plastic wrap.
Chill until firm
  1. Chill the wrapped cheese ball in the refrigerator for 2 hours, until firm to the touch.
Coat and assemble the turkey look
  1. Roll the chilled cheese ball in the finely chopped pecans until coated completely, then place it on a large board.
  2. Fan the pretzel rods and round butter crackers behind the ball as tail feathers, spacing them so the “turkey” shape shows.
  3. Press a cracker onto the front as the head, then add the candy eyes.
  4. Place a baby carrot tip as the beak and use the small piece of red bell pepper as the red pepper wattle under the eyes.
  5. Serve immediately with extra crackers.

Notes

For the cleanest rolling, chill until the ball feels firm and holds shape when unwrapped; if it softens, refrigerate 15–30 minutes before coating. Store covered in the refrigerator up to 3 days; freeze is not recommended because the cheese texture can become grainy. For a dairy-light swap, use reduced-fat cream cheese and cheddar (expect a slightly softer set).
