Strawberry peach pie bites are mini hand pie bites with golden, crimped pastry cups and a jammy strawberry-peach filling. Each bite is topped with a criss-cross pastry lattice and finished with a powdered sugar dusting for a light, flaky finish.

Ingredients
  

Refrigerated pie crusts
  • 2 refrigerated pie crusts Use two pie crusts from a 14 oz package; keep chilled until rolling.
Strawberry peach filling
  • 1.5 cup fresh strawberries Finely diced for a jammy, even texture in each bite.
  • 1.5 cup ripe peaches Peeled and finely diced.
  • 3 tbsp granulated sugar
  • 1 tbsp cornstarch Helps thicken the fruit filling.
  • 1 tbsp fresh lemon juice
  • 0.5 tsp cinnamon
  • 1 large egg Beaten with water for an egg wash.
  • 1 tbsp water Mixed into the beaten egg for brushing.
Finishing
  • powdered sugar Dust after cooling to set lightly on the flaky tops.

Method
 

Prep and bake
  1. Preheat the oven to 375°F and spray a 24-cup mini muffin tin with cooking spray.
  2. Toss diced strawberries and peaches with granulated sugar, cornstarch, lemon juice, and cinnamon; set aside.
  3. Roll out the refrigerated pie crusts and cut into 24 circles using a 3-inch round cutter; press one circle into each muffin cup.
  4. Fill each cup with a heaping teaspoon of the fruit filling.
  5. Cut small strips from remaining dough and criss-cross over the tops; brush with egg wash.
  6. Bake for 16-18 minutes, until the mini pie bites are golden.
Cool and finish
  1. Cool for 15 minutes.
  2. Dust with powdered sugar and serve.

Notes

Pro tip: dice the fruit fairly small so the cornstarch can thicken quickly and you get jammy centers without watery filling. Store baked pie bites in an airtight container in the refrigerator for up to 3 days; warm in a 300°F oven for 5 minutes to re-crisp. Freeze unbaked assembled bites for up to 1 month, then bake from frozen adding ~2-3 minutes; note that the powdered sugar is best added after baking. Dietary swap idea: use a gluten-free pie crust if you need a gluten-free version (baking time may vary slightly).
