Ingredients
  

Mini pretzels
  • 4 cup mini pretzels
Caramel
  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
Chocolate topping
  • 2 cup semi-sweet chocolate chips
  • 1 cup dark chocolate chips
Flaky sea salt topping
  • 1 flaky sea salt for topping
Optional white chocolate drizzle
  • 0.5 cup white chocolate Optional drizzle.

Method
 

Prep and bake the pretzels
  1. Preheat oven to 350°F and line a 15x10 rimmed baking sheet with foil, then spray with cooking spray.
  2. Spread the mini pretzels in a single layer on the prepared baking sheet, then set aside.
  3. Melt the unsalted butter and packed brown sugar in a saucepan over medium heat and bring to a boil, cooking exactly 3 minutes without stirring.
  4. Pour the caramel evenly over the pretzels.
  5. Bake for 5 minutes, then remove from the oven.
Melt chocolate and set the bark
  1. Immediately scatter the semi-sweet chocolate chips and dark chocolate chips over the hot caramel, then let sit 2 minutes.
  2. Spread the melted chocolate with a spatula until smooth.
  3. Sprinkle generously with flaky sea salt.
  4. Drizzle with white chocolate if using.
  5. Refrigerate for 1 hour until set, then break into pieces.

Notes

Pro tip: bake only until the caramel is bubbling and glossy, then add the chocolate right away so it melts cleanly over the hot layer. Store airtight in the refrigerator up to 5 days; freeze up to 2 months. For a dairy-light swap, use dairy-free chocolate chips and a plant-butter substitute in the caramel (texture may vary slightly).
