Ingredients

Goat cheese log
  • 10 oz goat cheese log Chilled
Cream cheese
  • 4 oz cream cheese Softened
Bacon coating
  • 6 bacon Cooked crisp and finely chopped
Pecans
  • 0.33 cup pecans Toasted and finely chopped
Dried cranberries
  • 0.25 cup dried cranberries Chopped
Chives
  • 1 tbsp fresh chives Chopped
Honey drizzle
  • 2 tbsp hot honey or regular honey For drizzling
Crackers for serving
  • 1 crackers As needed

Equipment

  • 1 stand mixer

Method

Make the creamy log
  1. Beat the chilled goat cheese log and softened cream cheese until completely smooth, then shape the mixture into a log.
  2. Wrap the log tightly in plastic wrap and chill for 30 minutes until firm.
Coat and finish
  1. On a plate, combine the finely chopped bacon, toasted pecans, chopped dried cranberries, and chopped fresh chives.
  2. Roll the chilled log in the mixture, pressing gently so the coating sticks on all sides.
  3. Transfer the coated log to a serving board and drizzle with hot honey (or regular honey).
  4. Serve the bacon goat cheese log with crackers.

Notes

For the cleanest slices and the best coating, chill until firm (about 30 minutes) and press the log into the bacon-pecan-cranberry mixture right after coating. Store covered in the refrigerator up to 3 days; freeze is not recommended for best texture. If you want a lighter option, use reduced-fat cream cheese while keeping the chilling time the same.
