Ingredients

Maple-candied bacon
  • 8 slices thick-cut bacon
  • 3 tbsp maple syrup
  • 1 tbsp brown sugar
  • 0.25 tsp black pepper
Crostini base
  • 1 loaf baguette
  • 2 tbsp olive oil
Cheese spread
  • 6 oz goat cheese
  • 2 oz cream cheese
Topping
  • 0.5 fresh thyme for garnish
  • 0.5 tbsp maple syrup plus more for drizzling

Equipment

  • 1 sheet pan

Method

Bake the maple bacon
  1. Preheat oven to 400F. Lay bacon on a rack over a lined baking sheet.
  2. Brush the bacon with maple syrup and sprinkle with brown sugar and black pepper. Make sure each strip is evenly coated for a glazed finish.
  3. Bake 18-20 minutes until crisp and glazed. Cool, then chop into pieces.
Toast the baguette slices
  1. Brush baguette slices with olive oil. Bake 6-8 minutes until golden.
Assemble and serve
  1. Mix goat cheese and cream cheese until smooth. Spread onto each crostini while the bread is still warm.
  2. Top with maple bacon, a light maple drizzle, and fresh thyme. Serve immediately.

Notes

For the cleanest texture, cool the bacon briefly so it stays glossy but can be chopped cleanly. Store assembled crostini in the fridge up to 1 day, but keep bacon and bread components separate for best crispness. Freeze the chopped bacon for up to 2 months; thaw and rewarm, then assemble fresh. If you want a dairy-light option, use a plant-based cream cheese alternative and keep the goat cheese portion reduced or swapped for a similar cultured spread.
