Chicken filling
  • 3 cup cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 0.5 cup pickled jalapeños plus more for topping
  • 0.5 cup sharp cheddar, shredded divided
  • 8 flour tortillas
White sauce
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cup chicken broth
  • 1 cup sour cream
  • 0.5 tsp garlic powder
  • 0.5 cup Monterey jack cheese, shredded
  • salt to taste
  • 0.5 cup sharp cheddar, shredded remaining for topping

Method
 

Prep and roll the enchiladas
  1. Preheat the oven to 375°F and grease a 9x13 baking dish, keeping it ready for a tight roll-in bake. Greasing prevents sticking and helps the bottom stay golden.
  2. Mix the shredded chicken, softened cream cheese, pickled jalapeños, and 1/2 cup cheddar until combined, then taste-check the jalapeño level. The mixture should look thick and cohesive for easy stuffing.
  3. Divide the filling among the flour tortillas, roll them up, and place seam-side down in the baking dish. Arrange them snugly so they hold their shape while the sauce bakes.
Make the creamy white sauce
  1. Melt the butter over medium heat, then whisk in the flour and cook for 1 minute. This cooks out the raw flour taste while forming a roux.
  2. Gradually add the chicken broth while whisking until the sauce thickens. Keep whisking until it coats a spoon.
  3. Remove from heat and stir in the sour cream, garlic powder, salt, and Monterey jack until smooth. The cheese should melt fully for a creamy, pourable sauce.
Assemble and bake
  1. Pour the white sauce over the enchiladas, making sure the tortillas are well covered. Let excess pool so it crisps and bubbles at the edges.
  2. Top with the remaining cheddar and scatter jalapeño rounds over the surface. The jalapeños should sit on top so they toast during baking.
  3. Bake for 25–30 minutes at 375°F until bubbly and golden. The center should be hot and the cheese should look melted with browned spots.
  4. Serve immediately after baking so the filling stays creamy and the tortillas don’t dry out. Resting too long can thicken the sauce.

Notes

Pro tip: soften the cream cheese at room temperature so it mixes smoothly with the chicken and jalapeños. Refrigerate leftovers in an airtight container for up to 3 days and reheat in the oven or microwave until hot. Freezing is not recommended because the sour cream sauce can separate when thawed; for a lighter option, use reduced-fat cream cheese and sour cream.
