  • 1 can (14 oz) sweetened condensed milk Use straight from the can.
  • 8 oz white chocolate Chop for even melting.
  • 0.25 cup tequila Use a tequila you enjoy sipping.
  • 0.25 cup fresh lime juice Fresh is best for bright flavor.
  • 2 tbsp butter Adds richness and smooth texture.
  • 0.25 cup powdered sugar Mixed with lime zest for the crystallized rim.
  • 1 tsp lime zest For the crystallized sugar rim.
  • 0.25 salt To taste; start with a pinch.

Method
 

Prepare the pan
  1. Line an 8x8-inch baking pan with parchment paper, leaving a little overhang for easy lifting later.
Melt and combine
  1. Combine sweetened condensed milk, white chocolate, tequila, fresh lime juice, and butter in a microwave-safe bowl.
  2. Microwave for 30 seconds, then stir; repeat microwave in 30-second intervals until smooth and fully melted.
  3. Stir in powdered sugar and salt until the mixture looks glossy and evenly blended.
Set the fudge
  1. Pour the fudge mixture into the prepared pan and spread evenly to the corners.
  2. Sprinkle the lime-sugar mixture (powdered sugar mixed with lime zest) evenly over the top for a crystallized rim.
  3. Freeze for at least 3 hours until firm and sliceable.
Slice and store
  1. Lift the fudge out using the parchment overhang, then cut into 16 pieces.
  2. Store in an airtight container in the freezer to keep the texture firm and cleanly sliceable.

Notes

Pro tip: for the clearest sugar-rim detail, sprinkle the lime-sugar mixture right after spreading the fudge, then avoid moving the pan during the freeze. Store covered in the freezer for up to 2 months; fridge storage will soften the texture. For a non-alcohol option, replace tequila with an equal amount of additional lime juice (flavor will be brighter, and the “margarita” note will be less boozy).
