Method
 

Sear the chicken
  1. Heat olive oil and 2 tablespoons butter in a Dutch oven over medium-high heat. Sear chicken skin-side down for 6-8 minutes until deeply golden and crisp, without moving it, then flip and cook 3 more minutes until browned. Remove chicken to a plate.
Cook apples and aromatics
  1. In the same pot, sauté shallots and apple slices over medium-high heat for 4-5 minutes until golden around the edges. Add minced garlic and fresh thyme, then cook 1 minute until fragrant.
Build the cider-mustard sauce
  1. Deglaze the pot with apple cider and cook for 2 minutes, scraping up the browned bits. Stir in chicken broth and Dijon mustard, then return chicken skin-side up.
Simmer until tender
  1. Cover and simmer over medium heat for 20 minutes until the chicken is cooked through (skin should stay intact). Keep the liquid gently bubbling, not boiling hard, for even braising.
Finish with cream
  1. Stir in heavy cream and simmer for 5 minutes, stirring occasionally, until the sauce turns glossy and slightly thickened. Season with salt and pepper to taste, then serve hot.

Notes

Pro tip: don’t move the chicken during the first sear—letting the skin contact the pan undisturbed is what creates crisp edges before braising. Refrigerate leftovers in an airtight container up to 3 days; reheat gently on the stovetop until warmed through. Freezing is not recommended because the cream sauce can separate after thawing. For a lower-fat option, use light cream (or half-and-half) though the sauce may be slightly thinner.
