Method
Preheat and prep
- Preheat oven to 425F and line a sheet pan with parchment for easy release and crisping.
- Place each potato between two chopsticks and slice thinly, stopping before cutting through so the slices fan but the potato stays intact.
Season and roast
- Mix melted butter, olive oil, minced garlic, salt, and black pepper, then brush over the potatoes and get some mixture between the slices.
- Roast for 35-40 minutes, brushing once more halfway, until the fanned edges are crisp and the centers are tender (look for golden edges).
Melt cheese and finish
- Sprinkle with shredded sharp cheddar and crumbled bacon, then bake 5 minutes more until the cheese melts and turns glossy.
- Top with a dollop of sour cream and chopped chives, then serve hot for best crunch and contrast.
Notes
For extra crisp edges, roast on a parchment-lined sheet pan without overcrowding so steam can escape. Store leftovers in the refrigerator up to 3 days; reheat on a hot sheet pan or in an oven at 425F until warmed through to regain some crunch. Freezing isn’t recommended because the potatoes and sour cream topping lose texture. If you want a lighter option, swap sour cream with plain Greek yogurt for similar tang with a bit more protein.
