Ingredients
  

Chicken breast
  • 1.5 lb chicken breast
Mixed mushrooms
  • 2 cup mixed mushrooms (cremini, shiitake), sliced
Wild rice blend
  • 0.75 cup wild rice blend, uncooked
Carrots
  • 3 carrots, sliced
Celery
  • 3 celery, sliced
Onion
  • 1 onion, diced
Garlic
  • 4 garlic, minced
Chicken broth
  • 8 cup chicken broth
Heavy cream
  • 1.5 cup heavy cream
Butter
  • 4 tbsp butter
Flour
  • 3 tbsp flour
Dried thyme
  • 1 tsp dried thyme
Bay leaf
  • 1 bay leaf
Salt and pepper
  • 0.25 salt and pepper to taste

Method
 

Sauté the vegetables
  1. Melt the butter in a large pot over medium heat. Add the onion, carrots, and celery and sauté for 5 minutes, stirring often until softened and glossy.
  2. Add the garlic and sliced mixed mushrooms to the pot. Cook for 4 minutes, stirring until the mushrooms release their moisture and start to brown at the edges.
Build the creamy base
  1. Whisk the flour into the vegetables and cook for 1-2 minutes. The mixture should smell nutty and look slightly thicker with no dry flour streaks.
  2. Pour in the chicken broth, then add the wild rice blend, chicken breast, dried thyme, and bay leaf. Bring everything to a simmer and stir so the rice is evenly distributed.
Simmer and finish
  1. Simmer the soup for 40 minutes, stirring occasionally, until the wild rice is tender and the chicken is cooked through. Skim any foam if needed and look for thickening as the rice releases starch.
  2. Remove the chicken from the pot and shred it. Remove the bay leaf and return only the shredded chicken to the soup.
  3. Stir in the heavy cream and return the soup to a gentle simmer for 5 minutes. It should look creamy and smooth, with small bubbles around the edges.
  4. Season with salt and pepper to taste. Taste and adjust until the flavors pop, then turn off the heat.

Notes

Pro tip: cook the flour for 1-2 minutes so the soup thickens without a raw-flour taste. Store in the refrigerator up to 3-4 days; reheat gently until steaming. Freezing is not ideal because the cream can slightly separate, but you can freeze and reheat on low with a short stir to bring it back together. For a lighter option, swap heavy cream with half-and-half, noting the broth will be a bit thinner.
