Cook the ranch chicken
- Heat olive oil in a cast iron skillet over medium-high heat. Add sliced chicken and season with half the ranch seasoning mix, then cook 4–5 minutes per side until cooked through.
- Transfer the cooked chicken to a plate and let it rest briefly. Slice into thinner strips for easier filling.
Make crispy cheesy taco shells
- Fold each flour tortilla in half. Griddle in a dry cast iron skillet until crispy on both sides and cheddar melts inside.
Assemble the tacos
- Fill each crispy taco shell with ranch chicken. Add crumbled bacon, shredded romaine, cherry tomatoes, and diced red onion.
- Drizzle each taco with ranch dressing. Dust with the remaining ranch seasoning mix right before serving.
Notes
Pro tip: cook the chicken until just done and use thin slices so it fills hot shells quickly. Store assembled tacos in the fridge up to 2 days, but keep shells separate to maintain crispness. Freeze chicken and bacon mixture up to 2 months; reheat and assemble fresh. For a lighter option, use low-fat ranch dressing and reduced-fat cheddar (taste stays similar, texture slightly less rich).
