Ingredients
Method
Mix the cheese ball base
- Beat cream cheese, shredded sharp cheddar, ranch seasoning, and green onions until well combined, using a smooth, cohesive texture with no visible dry seasoning (about 2 to 3 minutes).
Shape and chill
- Shape the mixture into a ball, wrap in plastic wrap, and chill at 40°F for 2 hours until firm with a moldable but set center.
Make the coating and roll
- Combine bacon, pecans, and fresh parsley on a plate so the coating is evenly mixed and ready to press onto the ball.
- Roll the chilled ball in the coating, pressing so it sticks on all sides and creates an even crunchy shell.
Rest and serve
- Let the cheese ball sit 10 minutes at room temperature so it becomes scoopable, then serve with crackers and pretzels.
Notes
Pro tip: if your cheddar is very dry or your cream cheese is still cool, the mixture may feel stiff—press and mix until fully combined before shaping. Refrigerate in an airtight container up to 3 days; serve within that window for best texture. Freezing is not recommended because the coating and dairy can become crumbly after thawing. For a lighter option, use low-fat cream cheese and reduced-fat cheddar (the shape sets best when the cream cheese is fully softened).
