Ingredients

Carbonara filling
  • 12 large eggs Use room-temperature eggs if possible for more even peeling.
  • 3 oz pancetta or guanciale Finely diced for crisp topping.
  • 0.33 cup mayonnaise
  • 0.25 cup finely grated pecorino romano Plus more for shaving.
  • 1 tsp dijon mustard
  • 1 clove garlic Grated.
  • 0.5 tsp coarsely cracked black pepper Plus more for topping.
  • 1 fresh parsley For garnish.

Equipment

  • 1 sheet pan

Method

Boil and chill the eggs
  1. Place the large eggs in a pot, cover with cold water, and bring to a boil over high heat; cover, remove from heat, and let stand 12 minutes. The eggs should be fully set with firm yolks.
  2. Chill the eggs in an ice bath for 10 minutes, then peel and halve them lengthwise. The whites will feel cold and make the filling pipe cleanly.
Make the carbonara yolk filling
  1. Cook the pancetta or guanciale for 6-8 minutes until crispy, then drain and reserve 1 teaspoon of the fat. The pieces should be browned and crisp.
  2. Mash the yolks with mayonnaise, finely grated pecorino romano, dijon mustard, grated garlic, coarsely cracked black pepper, and the reserved fat until smooth. The mixture should look creamy and thick.
  3. Pipe or spoon the filling into the egg white halves. Aim for a neat, mound-like top that holds its shape.
Finish and serve
  1. Top the eggs with crispy pancetta, shaved pecorino romano, cracked black pepper, and fresh parsley. Finish with a final visible dusting so the tops look speckled and glossy.

Notes

For the cleanest piping, let the boiled eggs chill fully in the ice bath before peeling, then pat the whites dry before filling. Store in the refrigerator for up to 2 days; for best texture, garnish with parsley and extra Pecorino right before serving. Freezing is not recommended. If you want a lighter option, use light mayonnaise for the yolk mixture and expect a slightly looser texture.
