Prep and crust

Cheesecake layer and apple topping
- Beat the cheesecake filling ingredients until smooth, then pour it over the hot crust.
- Cook the diced apples with butter, brown sugar, and cinnamon for 5 minutes until slightly softened, then scatter over the cheesecake.
Streusel and bake
- Make the streusel by rubbing cold butter into flour, brown sugar, and cinnamon, then scatter it over the apples.
- Bake for 35–40 minutes at 325°F until the center is just set with a slight jiggle.
- Cool completely, then refrigerate for 3 hours to firm up.
Finish
- Drizzle the bars with caramel sauce before serving, letting it fall in thin ribbons over each piece.
Notes
For the smoothest cheesecake bars, beat the cream cheese and sugar until no lumps remain before mixing in the eggs and sour cream. Refrigerate leftovers in a covered container for up to 4 days; freezing is not recommended for best texture. To make a lightly dairy-reduced version, use a high-quality lactose-free cream cheese and sour cream instead of regular dairy while keeping the same bake times.
