Bake the cookies
- Preheat the oven to 375F and line baking sheets with parchment, keeping the sheets ready to go for scooping. The oven should be fully heated before you bake.
- Whisk the all-purpose flour, baking soda, and salt together until the mixture looks evenly speckled. This ensures consistent lift and seasoning.
- Beat the unsalted butter and both sugars until fluffy, about 2 to 3 minutes. The mixture should look lighter in color and hold some air.
- Add the eggs, butter extract or vanilla extract, and butterscotch extract, then beat just until incorporated. Stop as soon as the batter looks smooth and cohesive.
- Fold the flour mixture into the wet ingredients until no dry streaks remain. Keep mixing gentle so the dough stays tender.
- Fold in the butterscotch chips evenly through the dough. You should see chips distributed throughout the dough.
- Scoop the dough into 2-tablespoon rounds and place them on the lined baking sheets with space between. Aim for even mounds so they bake uniformly.
- Bake at 375F for 10 to 12 minutes, until the cookies are golden around the edges. They should look set and slightly puffed.
- Cool the cookies completely before frosting. The surface should feel room-temperature so the frosting holds its shape.
Make and finish with butterscotch frosting
- Beat the cream cheese, unsalted butter, butterscotch sauce, powdered sugar, and vanilla until smooth and thick. The frosting should be pipeable and glossy.
- Pipe a generous swirl of butterscotch frosting onto each fully cooled cookie. Cover the top with a visible mound so each cookie gets a thick layer.
- Drizzle caramel sauce over the frosted cookies, then add a butterscotch chip on top. The finishing toppings should sit neatly without sinking into the frosting.
Notes
For clean piping, frost only when the cookies are fully cool and the frosting is thick; if it softens, refrigerate for 10 to 20 minutes before piping. Store cookies covered in the refrigerator for up to 5 days; freeze frosted cookies up to 2 months (thaw overnight in the fridge). For a lighter option, swap half the powdered sugar for powdered sugar light/less-sugar substitute if you want a lower-sugar frosting while keeping the same butterscotch sauce flavor.
