Biscuits and gravy casserole
  • 1 lb breakfast sausage
  • 1 can (16 oz) refrigerated biscuits use refrigerated or homemade biscuits
  • 4 tbsp all-purpose flour
  • 3 cup whole milk
  • 1 tsp black pepper generous
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne
  • 1 salt to taste
  • 6 eggs
  • 0.5 cup shredded cheddar optional

Method
 

Prep and preheat
  1. Preheat oven to 375F, then grease a 9x13 dish.
Cook sausage and make gravy
  1. Brown the breakfast sausage, then drain excess fat but leave 2 tablespoons in the pan.
  2. Whisk the all-purpose flour into the sausage drippings and cook for 1 minute.
  3. Gradually add the whole milk, then simmer until thick and creamy, stirring so it stays smooth.
  4. Season the gravy with black pepper, garlic powder, onion powder, cayenne, and salt, then taste and adjust as needed.
  5. Pour the sausage gravy into the prepared 9x13 dish.
Add biscuit topping and bake
  1. Cut the refrigerated biscuits into quarters and arrange them over the gravy.
  2. Bake for 30-35 minutes, or until the biscuits are golden.
  3. Scatter the shredded cheddar over the casserole, then bake for 5 more minutes until melted and bubbly.

Notes

Pro tip: for the smoothest sausage gravy, whisk the flour into the drippings before adding the milk, and simmer until you can draw a line through the gravy with a spoon. Store leftovers covered in the refrigerator up to 3 days; reheat in the oven or microwave until hot. Freezing is not recommended for best biscuit texture. If you need a lighter option, use reduced-fat milk in the gravy and expect a slightly thinner set.
