Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.75 cup orange juice
  • 0.25 cup water
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 1 pinch salt
  • 1 tsp vanilla extract

Equipment

  • 1 cast iron skillet

Method

Simmer the syrup
  1. In a saucepan, combine granulated sugar, brown sugar, orange juice, water, cinnamon stick, and salt, then bring to a boil while stirring until the sugar fully dissolves.
  2. Add fresh cranberries to the boiling mixture, then return to a boil, making sure the berries are evenly distributed.
Cook until berries burst
  1. Reduce the heat to a gentle simmer and cook for 10-12 minutes, stirring often, until most berries burst and the sauce thickens and looks glossy.
Finish and chill
  1. Remove from the heat and stir in orange zest and vanilla extract, then discard the cinnamon stick.
  2. Cool to room temperature, then chill until thickened further, about 10 minutes, for a spoonable, set texture.

Notes

For the thickest set, stir more frequently during the 10-12 minute simmer so the sauce reduces evenly. Store covered in the refrigerator up to 5 days; reheat gently on the stovetop or enjoy cold. This freezes well for up to 2 months. For a lower-sugar option, replace granulated sugar with a sugar substitute that measures like sugar and keep the brown sugar portion the same or reduce slightly to taste.
