Avocado Deviled Eggs

Avocado deviled eggs with a creamy avocado-yolk filling are made by hard-boiling eggs, chilling them briefly, and piping a smooth mash into the whites. The result is pale green deviled eggs topped with crumbled bacon, chili flakes, and cilantro for a fresh, tangy bite.

Ingredients

Eggs
  • 12 large eggs Use room-temperature eggs if possible for more even cooking.
Avocado filling
  • 2 ripe avocados Mash until fully smooth for a pipeable texture.
  • 2 tbsp Greek yogurt or mayonnaise Yogurt keeps it tangier; mayonnaise gives a richer filling.
  • 2 tbsp lime juice Fresh lime juice is best for bright flavor.
  • 1 clove garlic, grated Grate finely so it blends with the yolk.
  • 2 tbsp fresh cilantro, chopped Reserve a few leaves for topping.
  • 0.5 tsp salt Adjust to taste if using salted bacon.
  • 0.25 tsp cumin Adds warm, earthy depth.
Toppings (optional)
  • 4 slice bacon, cooked and crumbled Optional, but classic for deviled eggs. Skip for a no-meat version.
  • red pepper flakes for garnish Use to taste; omit if you want mild flavor.
  • cilantro leaves For topping and color (optional garnish).

Equipment

  • 1 pot
  • 1 ice bath bowl
  • 1 piping bag

Method

Boil and cool the eggs
  1. Place the 12 large eggs in a pot, cover with cold water, and bring to a boil. Once boiling, cover the pot, remove from heat, and let stand exactly 12 minutes.
  2. Transfer the eggs to an ice bath and chill for 10 minutes. This quick chill helps the yolks stay tender and keeps the filling color bright.
  3. Peel the eggs and halve them lengthwise. Keep the egg whites intact as the base for piping.
Make the avocado filling
  1. Mash the egg yolks with the mashed ripe avocados, Greek yogurt or mayonnaise, lime juice, grated garlic, chopped cilantro, salt, and cumin until smooth. Mix until it looks creamy and pipeable with no visible avocado chunks.
Fill and garnish
  1. Pipe the avocado-yolk filling into the egg whites. Fill each half generously for an even, creamy top.
  2. Top with the cooked and crumbled bacon, red pepper flakes, and cilantro leaves. Finish each egg right before serving for best color and freshness.
  3. Serve within a few hours so the avocado stays green. If holding, refrigerate and plate close to serving time to limit browning.

Notes

Pro tip: For the smoothest filling, mash avocado and yolks thoroughly before mixing in yogurt/mayo, then stir until glossy and pipeable. Store assembled deviled eggs in the refrigerator up to 2–3 days, but note the avocado may darken over time; freezer: no. Dietary swap: use Greek yogurt instead of mayonnaise for a lighter, tangier filling.
