Apple filling and spices
  • 21 oz apple pie filling
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 8 flour tortillas 8-inch
Cinnamon brown butter sauce
  • 0.5 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.5 cup water
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
Serving
  • 1 vanilla ice cream
  • 1 caramel sauce

Method
 

Prep and fill the tortillas
  1. Preheat oven to 350F and butter a 9x13 baking dish with a thin, even coat.
  2. Stir cinnamon and nutmeg into the apple pie filling until evenly combined.
  3. Spoon 2-3 tablespoons of apple filling down the center of each tortilla, roll tightly, and place seam-side down in the dish.
Brown butter cinnamon sauce and bake
  1. Melt butter with both sugars and water over medium heat, stirring until smooth and glossy.
  2. Add cinnamon and nutmeg to the sauce and stir to fully dissolve, then remove from heat.
  3. Pour sauce over the rolled enchiladas so most of the tortillas are covered.
  4. Bake for 20-25 minutes at 350F until bubbly around the edges and golden on top.
Serve
  1. Serve warm with vanilla ice cream and drizzle with caramel sauce.

Notes

For neat rolling, keep tortillas at room temperature so they bend without cracking. Refrigerate leftovers in a covered container up to 3 days and reheat in a 325F oven until warmed through. Freeze baked enchiladas without the ice cream for up to 2 months; thaw overnight in the fridge and reheat. For a lighter swap, use reduced-sugar apple pie filling and reduce granulated sugar to taste in the sauce.
