Cook and mash the sweet potatoes
- Boil the peeled and cubed sweet potatoes until completely tender, 15–20 minutes, then drain well.
- Mash the sweet potatoes with butter, heavy cream or milk, and salt until smooth and fluffy.
Sear, roast, and rest the pork tenderloin
- Pat the pork tenderloin dry and season all over with salt, black pepper, and garlic powder.
- Heat olive oil in a cast iron skillet over high heat, then sear the pork until browned on all sides, 2–3 minutes total.
- Transfer the skillet to a 400°F oven and roast until the internal temperature reaches 145°F, 12–15 minutes.
- Remove the pork and rest for 5 minutes, then slice.
Make the apple cider pan sauce
- In the same skillet, cook the minced garlic and sliced apple for 2 minutes, stirring, until fragrant and lightly softened.
- Add apple cider, chicken broth, Dijon mustard, and brown sugar, scraping up any browned bits.
- Simmer the sauce until reduced and thickened, 6–8 minutes, then swirl in butter and fresh thyme to finish.
Serve
- Spoon the apple cider pan sauce over the mashed sweet potatoes, then top with the sliced pork and spoon more sauce over the top.
Notes
For the smoothest mash, heat the butter and cream briefly before adding so they incorporate faster and stay lump-free. Refrigerate leftovers in a sealed container for up to 3 days; reheat pork gently in a skillet or microwave until just warm (avoid drying). Freezing is not recommended for the mashed potatoes, but the pork and sauce can be frozen up to 2 months. For a lighter option, use evaporated milk instead of heavy cream for a similar texture with less richness.
