Ingredients

Rim coating
  • 2 tbsp sugar For cinnamon sugar rims.
  • 1 tsp ground cinnamon For cinnamon sugar rims.
Drink
  • 2 cup apple cider Chilled; used for rims and filling flutes.
  • 1 bottle (750 ml) champagne or prosecco Chilled; topped into each flute.
  • 1 apple Thinly sliced for garnish.
  • 1 cinnamon sticks For garnish.

Method

Make the cinnamon sugar rim
  1. Mix the sugar and ground cinnamon on a small plate into an even coating with no visible clumps.
  2. Wet the rims of the flutes with chilled apple cider, then dip each rim into the cinnamon sugar so the edge is fully coated with a thin layer.
Assemble the mimosas
  1. Fill each flute one third full with the chilled apple cider for a golden base.
  2. Top each flute with champagne or prosecco, pouring gently so the layers stay light and fizzy.
  3. Garnish each flute with a thin apple slice and a cinnamon stick, then serve immediately.

Notes

Pro tip: keep everything chilled (cider and sparkling wine) so the bubbles last and the rim coating sets cleanly. Store any leftover apple cider topping separately in the fridge up to 3 days; freeze is not recommended for best texture. For a lower-sugar swap, reduce the sugar to 1 tbsp and add a tiny pinch extra cinnamon for balance.
