Ingredients

Seasoned gnocchi
  • 1 lb potato gnocchi shelf-stable or refrigerated — do not cook first
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Garlic herb butter finish
  • 3 tbsp butter
  • 2 clove garlic minced
  • 1 fresh parsley chopped
  • 0.25 cup parmesan for dusting

Equipment

  • 1 air fryer
  • 1 skillet

Method

Season the gnocchi
  1. In a mixing bowl, toss the potato gnocchi with olive oil, garlic powder, Italian seasoning, smoked paprika, salt, and black pepper until evenly coated. Make sure the gnocchi is dry and uncooked before air frying.
Air fry
  1. Preheat the air fryer to 400°F. Add the coated gnocchi in a single layer so pieces have space for crisping.
  2. Air fry the gnocchi for 12-15 minutes, shaking the basket halfway through. Cook until golden and crispy on the outside.
Garlic butter finish
  1. Melt the butter with minced garlic in a skillet over low heat for 1-2 minutes. Stir until fragrant but not browned.
  2. Toss the crispy air-fried gnocchi in the garlic butter. Top with fresh parsley and parmesan, then serve immediately.
Serve
  1. Serve the air fryer gnocchi right away as a side, or with marinara for dipping. Keep portions warm for the crispiest edges.

Notes

For maximum crisping, keep gnocchi in a true single layer and don’t overcrowd the air fryer basket. Refrigerate leftovers in an airtight container up to 3 days; reheat in the air fryer at 375°F for 4-6 minutes to re-crisp. Freezing isn’t recommended because the texture softens. If you want a lighter finish, use olive-oil-based spread or plant butter in the skillet instead of butter.
