Spiced Apple Prosecco

Spiced Apple Prosecco is a festive Italian-American drink that simmers cider with cinnamon and star anise, then chills it for a warmly spiced finish. The cinnamon-sugar rim and apple-slice garnish make each flute look like a holiday spritz.

Ingredients

Spiced cider base
  • 1 cup apple cider
  • 2 cinnamon sticks
  • 2 star anise
  • 3 whole cloves
  • 2 tbsp brown sugar
Bubbles and garnish
  • 1 bottle (750 ml) prosecco Chilled
  • 1 apple Thinly sliced
  • 1 Cinnamon sugar For the rims

Equipment

  • 1 Dutch oven

Method

Simmer the spiced cider
  1. In a Dutch oven, simmer apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, stirring once or twice, until fragrant. You should see gentle bubbling around the edges throughout the simmer.
Strain and chill
  1. Strain the spiced cider through a fine strainer and chill completely in the refrigerator. The cider should be cold to the touch before assembling the drinks.
Assemble the flutes
  1. Rim each chilled flute with cinnamon sugar. Dip or roll the rim so the sugar adheres in an even layer.
  2. Add 2 tablespoons of spiced cider to each flute. Pour in slowly so you preserve the foam and layered look.
  3. Top each flute with prosecco and garnish with a thin apple slice, then serve immediately. Aim for bubbly overflow at the top for maximum visual sparkle.

Notes

Pro tip: chill the spiced cider fully so the prosecco stays lively instead of going cloudy or flat. Store the strained spiced cider (no prosecco) in a sealed container in the fridge up to 4 days; freeze is not recommended for best flavor. For a lighter option, use a lower-sugar sparkling wine (or extra-dry prosecco) while keeping the spiced cider the same for the same aroma.
