Prep and bake the stuffing bites
- Preheat the oven to 375F and line a sheet pan with parchment for easy release.
- Brown the breakfast sausage with the onion and celery for 8-10 minutes, breaking it up, then drain excess fat and cool slightly.
- Stir in the herb stuffing mix, warm chicken broth, beaten eggs, shredded Parmesan, and chopped fresh sage until moist and evenly combined.
- Roll the mixture into 1 1/2-inch balls and place them on the prepared sheet pan.
- Bake for 20-25 minutes at 375F until golden and crisp on the outside.
Make the cranberry dipping sauce
- Warm the whole berry cranberry sauce with the orange juice and Dijon mustard, stirring until smooth.
- Serve the warm cranberry sauce alongside the sausage stuffing bites for dipping.
Notes
For extra crisp edges, don’t skip cooling the sausage mixture slightly before mixing—hot fat can make stuffing balls dense. Store leftover stuffing bites covered in the fridge up to 3 days; reheat on the sheet pan in a 350F oven until hot and crisp again. Cranberry sauce keeps in the fridge up to 5 days and can be rewarmed. For a lighter option, use turkey sausage and swap part-skim Parmesan if desired (texture stays similar).
