Ingredients

Cream cheese
  • 16 oz cream cheese softened
Cheeses
  • 2 cup shredded sharp cheddar
  • 0.5 cup shredded pepper jack
Seasonings
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp onion powder
Orange coating
  • 1 cup finely crushed nacho cheese tortilla chips or paprika for coating
Pumpkin details
  • 1 pretzel rod broken in half
  • 1 bay leaf or sage leaf
Serving
  • 1 crackers for serving
  • 1 apple slices for serving

Equipment

  • 1 stand mixer

Method

Mix the cheese base
  1. Beat cream cheese, shredded sharp cheddar, shredded pepper jack, garlic powder, smoked paprika, and onion powder until combined, smooth, and evenly colored. Stop and scrape the bowl as needed for a uniform texture.
Chill to firm
  1. Shape the mixture into a ball and wrap it in plastic wrap to seal the surface. Chill for 1 hour, until firm enough to coat.
Shape like a pumpkin
  1. Roll the chilled ball in finely crushed nacho cheese tortilla chips (or paprika) until fully coated orange. Press lightly so the coating adheres all over.
  2. Wrap 4 to 5 pieces of kitchen twine or the side of a spoon around the ball to press in pumpkin ridges. Keep pressure even so the grooves are visible from the side.
  3. Insert the pretzel rod into the top as a stem and tuck a bay leaf beside it. Arrange it so the stem points upward and the leaf reads like a pumpkin top.
Serve
  1. Chill until serving, keeping the cheese ball cold and set. Serve with crackers and apple slices on a snack board.

Notes

Pro tip: for sharp, clean pumpkin ridges, press the twine/spoon right after coating while the surface is still slightly tacky. Store covered in the refrigerator up to 3 days; it’s not recommended to freeze because the cheeses can weep after thawing. For a lighter option, swap half of the cream cheese for whipped light cream cheese to reduce richness while keeping the shape.
