Ingredients

Goat cheese
  • 8 oz goat cheese softened
Cream cheese
  • 4 oz cream cheese softened
Milk
  • 2 tbsp milk
Apricot preserves
  • 0.3333333333 cup apricot preserves
Honey
  • 2 tbsp honey
Dried apricots
  • 0.25 cup dried apricots finely chopped
Pistachios
  • 2 tbsp pistachios chopped
Fresh thyme leaves
  • 1 tsp fresh thyme leaves
Flaky sea salt
  • 0.25 tsp flaky sea salt pinch
Crackers or crostini
  • 1 crackers or crostini for serving

Equipment

  • 1 stand mixer

Method

Make the goat cheese base
  1. Beat the goat cheese, cream cheese, and milk until light and smooth, scraping the sides as needed for a uniform texture.
  2. Spread the mixture into a shallow serving bowl and make a swirl in the center so the toppings have a clear spot.
Warm the apricot topping
  1. Warm the apricot preserves with honey for 20-30 seconds, then stir until the mixture turns loose and pourable.
  2. Spoon the apricot honey over the goat cheese, letting it settle into the swirl.
Top and serve
  1. Top with the dried apricots, pistachios, fresh thyme leaves, and flaky sea salt for a visible, crunchy finish.
  2. Serve immediately with crackers or crostini on the side for easy scooping.

Notes

For the smoothest spread, use goat cheese and cream cheese that are fully softened (room temperature) before beating. Store covered in the refrigerator up to 3 days; for best texture, bring it back to cool room temperature for about 10 minutes before serving. Freezing is not recommended because the dairy can become grainy after thawing. If you want a dairy-light option, use lactose-free cream cheese and lactose-free goat cheese to keep the same tangy flavor.
