Ingredients

Eggs
  • 10 large eggs
Dressing
  • 0.5 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 0.25 cup celery stalk, finely diced
  • 2 tbsp red onion, finely minced
  • 0.25 tsp salt
  • 0.125 tsp black pepper
Garnish
  • 0.5 tsp Paprika
  • 2 tbsp fresh chives

Equipment

  • 1 Dutch oven

Method

Boil, rest, and peel
  1. Place the large eggs in a Dutch oven, cover with cold water, and bring to a boil. Cover, remove from heat, and let stand 12 minutes; you should see the water come to a full boil before the heat-off rest.
  2. Chill the eggs in an ice bath for 10 minutes and peel. Aim for cold-to-the-touch eggs so peeling is clean.
Make the yolk dressing
  1. Separate the yolks from the whites, then mash the yolks with mayonnaise. Mix until smooth and creamy, then stir in Dijon mustard for a pale yellow base.
  2. Add sweet pickle relish to the yolk mixture and mash again until evenly distributed. The dressing should look speckled rather than dry.
  3. Mix in white vinegar, salt, and black pepper until the dressing tastes balanced. You want a glossy, creamy texture with no dry pockets.
Fold and assemble
  1. Chop the egg whites into small pieces. Keep them chunky so the salad stays textured.
  2. Fold the chopped egg whites, finely diced celery, and finely minced red onion into the yolk dressing. Stir until the whites are coated and the celery and onion are visible throughout.
  3. Chill the egg salad for 30 minutes. Before serving, dust the top with paprika and sprinkle fresh chives for a bright finish and visual cue.

Notes

Pro tip: For neater folding, mash the yolks thoroughly first, then add whites and vegetables last to keep a chunky texture. Refrigerate in an airtight container up to 3 days; do not freeze (the mayonnaise base can break). For a lighter option, swap half the mayonnaise for plain Greek yogurt while keeping the Dijon and relish amounts the same.
