Chill and roll the goat cheese
- Roll the chilled goat cheese into 16 balls and place them on a tray. Freeze for 20 minutes until firm so the centers hold their shape.
Set up the breading station
- Set up three bowls with the all-purpose flour, beaten eggs, and panko breadcrumbs mixed with garlic powder. Keep them arranged in order for quick, even coating.
Bread the poppers
- Coat each goat cheese ball in flour first, shaking off excess. This helps the egg coat stick evenly.
- Coat each flour-dusted ball in the beaten eggs. Let any excess drip back into the bowl.
- Coat each ball in the panko mixture, pressing the crumbs firmly so they adhere. Place the breaded balls on the tray as you finish.
Fry until golden
- Heat 2 inches of vegetable oil in a heavy pot to 350°F. Use a thermometer if needed for steady frying.
- Fry the poppers in batches for 1-2 minutes until golden brown. Drain on paper towels to remove excess oil.
Finish and serve
- Drizzle the hot poppers with honey or hot honey. Aim for an even sheen over the crispy crust.
- Sprinkle with fresh thyme and flaky sea salt. Serve immediately while the centers are still creamy-melted.
Notes
Pro tip: freeze firmly and fry in small batches so the oil stays at 350°F and the crumbs don’t loosen. Store leftovers in the fridge up to 2 days, then re-crisp in a 400°F oven until warmed through (they may be less creamy). Freezing is not recommended after frying. Dietary swap: use a plant-based goat cheese alternative for a dairy-free version if available.
