Bacon Wrapped Brown Sugar Smokies are baked until the thin-cut bacon turns crisp and the brown sugar forms a bubbly caramel coating. Each little smokie is wrapped, rolled in a cayenne-kissed sugar mix, then baked on a parchment-lined pan for easy cleanup.

Ingredients

Little smokies
  • 14 oz little smokies
Bacon
  • 1 lb thin-cut bacon Each slice cut into thirds.
Brown sugar
  • 1 cup brown sugar Packed.
Cayenne
  • 0.25 tsp cayenne pepper
Butter
  • 2 tbsp butter Melted.

Prep and preheat
  1. Preheat the oven to 350F and line a baking sheet with foil and parchment for easy cleanup.
Wrap and coat
  1. Wrap each smokie in a piece of bacon and secure it with a toothpick.
  2. Mix the brown sugar and cayenne, then roll each wrapped smokie in the mixture to coat and form a thick candied layer.
Bake
  1. Arrange the coated smokies on the pan and drizzle with the melted butter, then sprinkle any remaining sugar over the top.
  2. Bake for 30-35 minutes at 350F until the bacon is crisp and the sugar is bubbly and caramelized.
Finish
  1. Cool for 5 minutes so the glaze sets slightly, then serve warm for the best texture.

Notes

Pro tip: Pack the brown sugar firmly so it adheres during baking and becomes a thicker caramel crust. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a 325F oven until warmed through and the exterior regains some crispness. Freezing isn’t recommended because the caramel coating can turn grainy after thawing. For a lower-sugar option, use a sugar substitute that measures like brown sugar to keep the same roll-and-caramel method.
